Cookie Dough Baked Oats

Ingredients
- 1 cup old fashioned oats
- 1/2 tsp baking powder
- Pinch of sea salt
- 1 small/medium banana
- 2 Tbsp cashew butter
- 1 cup almond milk
- 1/2 Tbsp maple syrup
- 1 tbsp dark chocolate chips
TOPPING:
- Handful of dark chocolate chips
- 1 tbsp cashew butter
Instructions
- Preheat your oven to 350°F.
- In a blender, mix together the old fashioned oats, baking powder, sea salt, banana, cashew butter, almond milk, and maple syrup until you get a smooth, creamy consistency.
- Set aside 3 tablespoons of the batter and pour the rest into an oven-safe baking dish. Stir in the dark chocolate chips until they’re evenly distributed.
- Add 1 tablespoon of cashew butter to the center of the mixture in the baking dish, then pour the reserved batter on top. Sprinkle additional chocolate chips on top.
- Bake for 30-35 minutes for a gooey center. If you prefer a firmer center, bake for an additional 10 minutes.
- Let it cool for a few minutes, then dive in and enjoy the warm, comforting goodness!
