Churro Pudding Cake
Ingredients
Cinnamon Sponge:
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1½ tsp ground cinnamon
- ½ tsp salt
- 1 cup dairy-free milk almond, soy, or oat
- ½ cup vegetable oil or melted coconut oil
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
Cinnamon Sugar Layer:
- ¼ cup granulated sugar
- 1½ tsp ground cinnamon
Spiced Chocolate Sauce:
- 1 cup dairy-free milk
- ½ cup dairy-free dark chocolate chips
- ¼ cup cocoa powder
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tsp vanilla extract
Instructions
Prepare the Cinnamon Sponge:
- Preheat your oven to 350°F (175°C).
- Grease and line an 8-inch square baking dish with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.
- In another bowl, mix the dairy-free milk, vegetable oil, vanilla extract, and apple cider vinegar until well combined.
- Add the wet ingredients to the dry ingredients, mixing until just combined.
- Pour half of the batter into the prepared baking dish and spread it evenly.
Add the Cinnamon Sugar Layer:
- In a small bowl, mix the granulated sugar and ground cinnamon.
- Sprinkle half of the cinnamon sugar mixture evenly over the batter in the baking dish.
Add the Remaining Batter:
- Pour the remaining batter over the cinnamon sugar layer and spread it evenly.
- Sprinkle the remaining cinnamon sugar mixture on top of the batter.
Bake the Cake:
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes.
Prepare the Spiced Chocolate Sauce:
- In a medium saucepan, heat the dairy-free milk over medium heat until warm.
- Add the dark chocolate chips, cocoa powder, granulated sugar, ground cinnamon, ground nutmeg, and vanilla extract, stirring continuously until the chocolate is melted and the sauce is smooth.
- Remove from heat and let it cool slightly.
Serve:
- Pour the spiced chocolate sauce over the warm cake.
- Serve the cake warm and enjoy the gooey, cinnamon-spiced goodness.
