Ingredients

Cinnamon Sponge:

  • cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • tsp ground cinnamon
  • ½ tsp salt
  • 1 cup dairy-free milk almond, soy, or oat
  • ½ cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar

Cinnamon Sugar Layer:

  • ¼ cup granulated sugar
  • tsp ground cinnamon

Spiced Chocolate Sauce:

  • 1 cup dairy-free milk
  • ½ cup dairy-free dark chocolate chips
  • ¼ cup cocoa powder
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp vanilla extract

Instructions

Prepare the Cinnamon Sponge:

  • Preheat your oven to 350°F (175°C).
  • Grease and line an 8-inch square baking dish with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt.
  • In another bowl, mix the dairy-free milk, vegetable oil, vanilla extract, and apple cider vinegar until well combined.
  • Add the wet ingredients to the dry ingredients, mixing until just combined.
  • Pour half of the batter into the prepared baking dish and spread it evenly.

Add the Cinnamon Sugar Layer:

  • In a small bowl, mix the granulated sugar and ground cinnamon.
  • Sprinkle half of the cinnamon sugar mixture evenly over the batter in the baking dish.

Add the Remaining Batter:

  • Pour the remaining batter over the cinnamon sugar layer and spread it evenly.
  • Sprinkle the remaining cinnamon sugar mixture on top of the batter.

Bake the Cake:

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes.

Prepare the Spiced Chocolate Sauce:

  • In a medium saucepan, heat the dairy-free milk over medium heat until warm.
  • Add the dark chocolate chips, cocoa powder, granulated sugar, ground cinnamon, ground nutmeg, and vanilla extract, stirring continuously until the chocolate is melted and the sauce is smooth.
  • Remove from heat and let it cool slightly.

Serve:

  • Pour the spiced chocolate sauce over the warm cake.
  • Serve the cake warm and enjoy the gooey, cinnamon-spiced goodness.

Notes

  • Dairy-Free Milk: Any plant-based milk works well for this recipe, such as almond, soy, or oat milk.
  • Chocolate Chips: Ensure the dark chocolate chips are dairy-free for a vegan option.
  • Serving: This cake is best enjoyed warm for the ultimate gooey texture and flavor.
