Here’s a fun last-minute Halloween or fall idea that I just had to try after seeing something similar on my friend @melissas_healthykitchen’s page! It’s super easy—all you need to do is dip apple slices in chocolate, sprinkle on your favorite toppings (I went with crushed peanuts and caramel sauce), freeze them for a few minutes, and voila! You’ve got the perfect festive snack.

Chocolate Dipped Caramel Apples

Ingredients

  • 12 apples (sliced into 1-inch thick pieces)
  • 1 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 cup caramel sauce (I used vegan caramel)
  • 3/4 cup crushed unsalted peanuts


Instructions

  1. Cut your apples into slices, then insert a popsicle stick into the bottom of each slice.
  2. In a small bowl, combine the chocolate chips and coconut oil. Microwave in 2-3, 30-second increments, stirring in between, until the chocolate is melted.
  3. Dip each apple slice into the melted chocolate, then place them on a parchment-lined baking sheet.
  4. Sprinkle crushed peanuts on top of each chocolate-covered apple slice, then drizzle with caramel sauce.
  5. Freeze the apple slices for 20 minutes until the chocolate sets.
  6. Optional: Add a sprinkle of flaky salt on top before enjoying.
  7. Now, all that’s left to do is indulge in these delicious and festive chocolate-covered apple slices!
