The chipotle shrimp is smoky, spicy, and bursting with flavor! It’s simple to prepare and pairs wonderfully with cilantro lime rice. The best part? Everyone can customize their bowl with toppings like beans, guacamole, sour cream, or even pico de gallo!

Ingredients

**For the Chipotle Shrimp:**

  • 1 pound medium raw shrimp deveined & tail off
  • 2 to 3 tablespoons chipotle adobo sauce adjust to taste
  • 2 tablespoons olive oil
  • 2 teaspoons fresh garlic finely minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 3/4 to 1 teaspoon salt adjust to taste
  • 1 teaspoon oregano
  • 1 teaspoon coriander
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for drizzling on the skillet/pan

**For the Cilantro Lime Rice:**

  • 1 1/2 cups long-grain basmati rice rinsed and drained
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 2 teaspoons fresh garlic finely minced
  • 2 1/2 cups water
  • 1 1/2 teaspoon salt or to taste
  • 1 bay leaf
  • Juice of 1 lime
  • Juice of half a small lemon
  • 1/4 to 1/3 cup cilantro finely chopped

**Optional Toppings:**

  • Avocado
  • Sour cream
  • Lettuce
  • Black beans
  • Roasted corn
  • Pico de gallo

Instructions

**1. Cook the Shrimp:**

  • – Pat the shrimp dry with paper towels.
  • – In a bowl, combine the shrimp with chipotle adobo sauce, olive oil, fresh garlic, chili powder, cumin, salt, oregano, coriander, and black pepper. Ensure the shrimp is evenly coated.
  • – Heat a pan or cast-iron skillet over high heat. Drizzle with olive oil and add the shrimp, making sure not to overcrowd the pan. Cook for about 8 minutes, flipping halfway for a nice sear. Remove from the pan once cooked through to prevent overcooking.

**2. Make the Rice:**

  • – Rinse the rice in a fine-mesh sieve until the water runs clear to remove excess starch. Alternatively, soak it in cool water for 30 minutes and then drain well.
  • – Bring 2 1/2 cups of water to a boil in a kettle.
  • – In a pot over medium heat, add olive oil, butter, garlic, and rice. Toast for 2 to 3 minutes.
  • – Add hot water, salt, and bay leaf. Bring to a boil, then reduce heat, cover, and simmer for 12 to 14 minutes.
  • – After cooking, let the rice sit covered for 10 minutes. Fluff with a fork and transfer to a bowl. Add lime juice, lemon juice, and chopped cilantro. Mix well.

**3. Assemble:**

  • – Create bowls with rice, shrimp, and your choice of toppings. Enjoy your customized Chipotle Shrimp Rice Bowl!
