Description

This Chickpea Salad Sandwich is a creamy, savory, meat-free lunch made with mashed chickpeas, crisp vegetables, Dijon mustard, and a simple mayo-based dressing.


Ingredients

  • 2 cans chickpeas, 15.5 ounces each, with liquid
  • 2 tablespoons finely minced celery
  • 2 tablespoons finely minced yellow onion
  • 2 tablespoons finely chopped fresh parsley
  • 4 to 5 tablespoons vegan mayonnaise
  • 2 to 3 teaspoons Dijon mustard, plus more to taste
  • 1/2 teaspoon salt, or adjust to taste


Instructions

  1. Pour the chickpeas and their liquid into a medium saucepan. Place the pan over medium heat.
  2. Let the chickpeas simmer for about 10 minutes, stirring from time to time so they heat evenly and do not stick.
  3. After simmering, pour the chickpeas into a colander and drain them thoroughly. Let as much excess liquid escape as possible.
  4. Move the drained chickpeas into a large mixing bowl. Use a potato masher or fork to mash them until you reach the texture you want. Keep some chunks if you like a more rustic salad, or mash more for a smoother filling.
  5. Add the minced celery, minced onion, chopped parsley, vegan mayonnaise, Dijon mustard, and salt to the bowl.
  6. Stir everything together until the mixture looks evenly combined and creamy throughout.
  7. Taste the salad and adjust the seasoning as needed. Add more salt, mustard, or mayonnaise if you want stronger flavor or a softer texture.
  8. Once the flavor feels right, cover the bowl tightly with a lid or plastic wrap and place it in the refrigerator. Chill for about 1 hour so the flavors can settle and blend.
  9. If you prefer, serve the chickpea salad right away instead of chilling it first. Spoon it onto bread, stuff it into lettuce cups, or use your favorite toppings and enjoy immediately.

Notes
