Cheesy Frico Fried Egg Tostadas

Ingredients
  

  • 1 large tomato finely chopped
  • 1/2 jalapeño finely chopped (seeds removed)
  • 1/4 red onion finely chopped
  • 2 tablespoons fresh cilantro chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon kosher salt plus extra
  • 2 ounces shredded cheddar cheese about 1/2 cup
  • 2 ounces shredded pepper Jack cheese about 1/2 cup
  • 4 large eggs
  • Freshly ground black pepper optional

Instructions
 

  • In a medium bowl, mix together tomato, jalapeño, onion, cilantro, lime juice, and 1/2 teaspoon salt. Set aside for serving later.
  • Line a sheet pan with parchment paper. Toss cheddar and pepper Jack cheese in a small bowl until combined.
  • Spread 1/4 cup of cheese mixture evenly in a small nonstick skillet over medium heat. Let it melt and bubble for 1 to 2 minutes.
  • Crack an egg into the center of the cheese, season with salt and pepper if desired, and let it cook until the egg white starts to set and the frico turns deep orange-brown, about 2 minutes. Cover the pan and cook until the egg white fully sets, about 1 more minute. Uncover and cook until the frico is firm enough to lift, around 1 more minute.
  • Carefully transfer the frico egg to the prepared sheet using a nonstick spatula. Let it sit for 2 minutes to harden. Repeat the process with the remaining cheese mixture and eggs.
  • Serve your frico eggs topped with the pico de gallo mixture you prepared earlier. Enjoy the cheesy goodness!
