Cheesecake Stuffed Strawberries

Ingredients
- 1 pound ripe strawberries
- 1/2 cup plain Greek yogurt or dairy-free for vegan option
- 1/4 cup white chocolate chips or dairy-free for vegan option
- 5 graham crackers or dairy-free/gluten-free for vegan option
Instructions
- Hollow out each strawberry using a knife or melon baller and set aside.
- Melt the white chocolate chips, then combine with plain Greek yogurt.
- Use a small spoon to fill each strawberry with the yogurt-chocolate mixture, then dip the tops in graham cracker dust.
- Chill in the fridge or enjoy immediately.
Notes
- Utilize a sharp paring knife for easy coring of the strawberries.
- Ensure the yogurt is at room temperature to avoid hardening when mixed with melted chocolate. If hardening occurs, microwave the mixture for 10 seconds and remix.
