Hello there! Happy Sunday! Today, we’ve got a delicious treat for you – our take on a classic French toast bake with a sweet twist. Imagine slices of soft brioche bread hugging a luscious filling made of sweetened ricotta and mascarpone, all soaked in a delightful ricotta custard. And guess what? It wouldn’t be complete without the joy of chocolate chips!

Cannoli Baked French Toast

Ingredients
  

  • 1 loaf of brioche bread sliced
  • 4 eggs
  • 1/4 cup of granulated sugar
  • 1 cup of whole milk
  • 1/4 cup of ricotta cheese
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of kosher salt
  • 1 cup of mini chocolate chips

**Cannoli Filling:**

  • 8 ounces of mascarpone cheese
  • 1 1/2 cups of whole milk ricotta cheese
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract

Instructions
 

  • Start by whisking together in a big bowl: milk, eggs, ricotta, sugar, salt, and vanilla.
  • Now, in another bowl, whip up the ingredients for the cannoli filling until it’s smooth and creamy.
  • Take a slice of brioche, spread 2 tablespoons of the cannoli mixture, and top it with another slice. Cut it into four pieces and arrange them, facing up, in a buttered baking dish. Repeat until all your bread is used up.
  • Pour that tasty custard over the bread, cover it up, and let it chill in the fridge overnight. This way, the custard can really soak into the bread.
  • The next day, preheat your oven to 350 degrees F.
  • Uncover your baking dish, sprinkle on those mini chocolate chips, and bake for 30-35 minutes or until it’s beautifully golden brown. Finish it off with a dusting of powdered sugar – perfection!
