Ingredients
  

Dry Ingredients

  • 1.5 cups all-purpose flour
  • ½ cup vanilla protein powder
  • 1 teaspoon baking soda
  • ½ cup fresh blueberries

Wet Ingredients

  • ½ cup packed light brown sugar
  • ¼ cup maple syrup
  • 1 cup mashed blueberries
  • 2 large eggs
  • ½ cup unsweetened plain almond milk
  • 2 tablespoons melted coconut oil

Instructions
 

  • Preheat your oven to 350ºF and grease the donut pan with cooking spray.
  • In a medium bowl, mix together all the dry ingredients and set aside.
  • In a large bowl, whisk together the brown sugar and maple syrup. Add the mashed blueberries, eggs, and almond milk, and stir until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully combined. Then, add the melted coconut oil and mix again.
  • Fill each donut well generously, about 3/4 full to the top.
  • Bake at 350ºF for 8-10 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the donuts from the oven and allow them to cool for a few minutes before transferring them to a wire rack to cool completely. Avoid leaving them in the pan for too long to prevent overbaking.
  • Store the donuts in an airtight container in a cool, dry place.
