Preheat your oven to 350ºF and grease the donut pan with cooking spray.
In a medium bowl, mix together all the dry ingredients and set aside.
In a large bowl, whisk together the brown sugar and maple syrup. Add the mashed blueberries, eggs, and almond milk, and stir until well combined.
Gradually add the dry ingredients to the wet mixture, stirring until fully combined. Then, add the melted coconut oil and mix again.
Fill each donut well generously, about 3/4 full to the top.
Bake at 350ºF for 8-10 minutes or until a toothpick inserted into the center comes out clean.
Remove the donuts from the oven and allow them to cool for a few minutes before transferring them to a wire rack to cool completely. Avoid leaving them in the pan for too long to prevent overbaking.
Store the donuts in an airtight container in a cool, dry place.
