  • 1/2 teaspoon kosher salt
  • 1 cup extra-virgin olive oil
  • 1/2 cup finely chopped shallot
  • 4 medium yellow peaches halved lengthwise and sliced 1/4 inch thick
  • 4 small mini cucumbers sliced 1/4 inch thick
  • 2 cups fresh blueberries
  • 2 tablespoons thinly sliced fresh basil
  • 3/4 cup crumbled feta cheese


  • Step 1: In a large bowl, whisk together the vinegar, lemon zest, mustard, and salt. Slowly add the olive oil while whisking until the dressing is smooth and well combined. Stir in the shallots.
