Blueberry Cobbler

Ingredients

  • 4 tablespoons unsalted butter (about 1/2 stick)
  • 3/4 cup all-purpose flour
  • 1/2 cup honey or agave
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup almond milk or any kind of milk
  • 2 cups fresh blueberries (about 1.5 pints)


Instructions

  1. Spray an 8×11-inch baking dish with cooking spray and place the stick of butter in it. Let it melt in the oven while preheating to 350°F.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Add milk to the dry ingredients and whisk until combined. Then, add honey and whisk again until the batter resembles pancake batter.
  4. Remove the baking dish from the oven and pour the batter into it. Scatter the blueberries on top.
  5. Bake for 50-60 minutes until the center is mostly cooked.
  6. Serve the cobbler as it is or top it with whipped cream or ice cream for an extra treat.

Notes

  • You can use fresh or frozen berries for this recipe.
  • Adjust the amount of berries based on their size.
  • If you have an 8×8 or 9×9 baking dish, adjust the cooking time accordingly.
