Ingredients
  

  • 4 tablespoons unsalted butter about 1/2 stick
  • 3/4 cup all-purpose flour
  • 1/2 cup honey or agave
  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup almond milk or any kind of milk
  • 2 cups fresh blueberries about 1.5 pints

Instructions
 

  • Spray an 8×11-inch baking dish with cooking spray and place the stick of butter in it. Let it melt in the oven while preheating to 350°F.
  • In a bowl, whisk together flour, baking powder, and salt.
  • Add milk to the dry ingredients and whisk until combined. Then, add honey and whisk again until the batter resembles pancake batter.
  • Remove the baking dish from the oven and pour the batter into it. Scatter the blueberries on top.
  • Bake for 50-60 minutes until the center is mostly cooked.
  • Serve the cobbler as it is or top it with whipped cream or ice cream for an extra treat.

Notes

  • You can use fresh or frozen berries for this recipe.
  • Adjust the amount of berries based on their size.
  • If you have an 8×8 or 9×9 baking dish, adjust the cooking time accordingly.
