Ingredients
  

  • 4 cups shredded cooked chicken
  • 4 ounces cream cheese softened
  • 1/4 cup Buffalo sauce
  • 3 scallions thinly sliced
  • Kosher salt
  • Freshly ground black pepper
  • 3 cups shredded cheddar cheese about 8 ounces
  • 3 cups shredded Monterey Jack cheese about 8 ounces
  • 24 small flour tortillas
  • Ranch dressing for dipping

Instructions
 

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • In a large bowl, mix together the shredded chicken, softened cream cheese, Buffalo sauce, and sliced scallions. Season with salt and pepper to taste.
  • In another bowl, combine the shredded cheddar and Monterey Jack cheeses. Cut the tortillas in half. Sprinkle about 1 tablespoon of the cheese mixture onto one half of a tortilla. Spoon about 1 tablespoon of the chicken mixture onto the center of the tortilla half.
  • Starting from the cut edge, fold the bottom quarter of the tortilla into a triangle, then roll it into a cone shape. Repeat this process with the remaining tortillas, cheese mixture (save some for sprinkling), and chicken mixture.
  • Place a 3-inch-wide cup or bowl in the center of the prepared baking sheet. Arrange the smaller, pointed ends of the tortillas against the cup. Keep arranging the rolled tortillas around the cup to form a ring. Sprinkle some cheese mixture over the top of the tortillas. Repeat to create 2 more layers. Remove the cup from the center.
  • Bake the quesadilla ring until the cheese is gooey and the centers are warm, about 20 to 25 minutes.
  • Pour some ranch dressing into a 3-inch ramekin and place it in the center of the quesadilla ring for easy dipping.
