
Blended Strawberry Overnight Oats

Blended Oats:
- 1 cup old-fashioned rolled oats
- 1 cup almond milk (or any other milk/nut milk alternative)
- 1/2 cup fresh or frozen strawberries
- 1 tbsp ground flax
- 1 tbsp cashew or almond butter
- 1 tsp vanilla extract
- 1 tsp maple syrup
Toppings:
- 1/4 cup non-dairy yogurt
- 1/4 cup freeze-dried strawberries (crushed)
Instructions
- In a blender, combine all ingredients except for the yogurt and freeze-dried strawberries.
- Blend for 30-60 seconds until smooth and creamy.
- Pour the blended oats into a bowl and refrigerate for at least 4 hours or freeze for 20 minutes to firm up.
- Once firm, spread yogurt on top and sprinkle with crushed freeze-dried strawberries. Enjoy!
Notes
- Blend ingredients on high speed for 30-60 seconds until smooth and creamy. Consider using a smaller blender for optimal blending.
- For same-day enjoyment, freeze the blended oats for about 20 minutes until firm.
