Blended Strawberry Overnight Oats

Ingredients

Blended Oats:

  • 1 cup old-fashioned rolled oats
  • 1 cup almond milk (or any other milk/nut milk alternative)
  • 1/2 cup fresh or frozen strawberries
  • 1 tbsp ground flax
  • 1 tbsp cashew or almond butter
  • 1 tsp vanilla extract
  • 1 tsp maple syrup

Toppings:

  • 1/4 cup non-dairy yogurt
  • 1/4 cup freeze-dried strawberries (crushed)


Instructions

  1. In a blender, combine all ingredients except for the yogurt and freeze-dried strawberries.
  2. Blend for 30-60 seconds until smooth and creamy.
  3. Pour the blended oats into a bowl and refrigerate for at least 4 hours or freeze for 20 minutes to firm up.
  4. Once firm, spread yogurt on top and sprinkle with crushed freeze-dried strawberries. Enjoy!

Notes

  • Blend ingredients on high speed for 30-60 seconds until smooth and creamy. Consider using a smaller blender for optimal blending.
  • For same-day enjoyment, freeze the blended oats for about 20 minutes until firm.
