Cookie Dough Blended Oats

  • 1/2 cup old-fashioned rolled oats
  • 1 scoop plant-based protein powder (about 1/4 cup)
  • 1 tbsp ground flaxseed
  • 1 1/4 cups almond milk
  • 1 tbsp cashew butter
  • 1 tsp vanilla extract
  • 1 tbsp dark chocolate chips

Frosting

  • 3 tbsp coconut yogurt
  • 1/4 cup dark chocolate chips (melted)


Instructions

  1. Blend oats, protein powder, ground flaxseed, almond milk, cashew butter, and vanilla extract until smooth and creamy, about 30-60 seconds.
  2. Transfer the batter to a bowl and mix in chocolate chips. Cover and refrigerate for at least 4 hours or freeze for 20 minutes to cool.
  3. Melt chocolate chips and mix with coconut yogurt. Spread this mixture over the blended oats and smooth out.
  4. Enjoy as is, or chill again in the fridge or freezer for a firmer texture. Serve and savor the deliciousness!

Notes

  • For a colder treat, freeze blended oats for 20 minutes before adding frosting.
  • Ensure oats are firm before adding frosting to prevent mixing. However, if aesthetics aren’t a concern, it’ll still taste fantastic!
