Blackberry Cheesecake Cottage Cheese Ice Cream

Ingredients

  • 22 oz. full-fat cottage cheese (we opted for 4%)
  • ¼ – 1/3 cup honey*
  • 1 teaspoon vanilla extract
  • 1 cup + â…“ cup fresh blackberries (separated)
  • 3 graham cracker sheets (separated)
  • Optional: ½ teaspoon flakey salt


Instructions

  1. In a high-speed food processor, blend together cottage cheese, honey, and vanilla extract until thick and creamy, about 3-5 minutes.
  2. Add 1 cup of blackberries to the mixture and pulse until the blackberries are slightly broken up, giving the cottage cheese a lovely purple hue.
  3. Transfer the mixture to a bowl or loaf pan. Crumble two graham crackers on top and gently fold them in.
  4. Sprinkle the remaining blackberries over the mixture and crumble the last graham cracker on top. You can also add a dash of salt if desired.
  5. Cover and freeze for at least 4-6 hours or overnight until firm.
  6. Serve in a bowl or on an ice cream cone for a delightful treat!
