And let me tell you about my 5 Minute Pumpkin Butter—it’s incredibly delicious, super simple, and unbelievably easy to whip up! Let’s talk about pumpkin butter—it’s one of the tastiest treats ever, in my opinion. I first fell head over heels for it after trying the one from Trader Joe’s a few years back. But here’s the thing: the Trader Joe’s version is packed with processed cane sugar, which isn’t exactly ideal for our health. So, as always, I set out to find a healthier alternative, and that’s how my Healthy Pumpkin Butter came to be!

Better Than Trader Joe’s Pumpkin Butter

Ingredients

Scale
  • 2 cups Pumpkin Puree
  • 1/2 cup Honey
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Pumpkin Pie Spice (if you don’t have any, you can make your own!)
  • Juice of 1 Lemon


Instructions

  1. Heat a saucepan on the stove over low heat.
  2. Add all your ingredients to the pan and give them a good stir until everything is nicely mixed together.
  3. Let it cook for about 4-5 minutes, stirring occasionally, until the pumpkin butter changes color from bright orange to a lovely light brown.
  4. Once it’s done, remove the pan from the heat and let your pumpkin butter cool down.
  5. Serve it on toast, with fruit, or any way you like! Store the leftovers in a jar in the fridge for up to one week, and savor the deliciousness whenever you want!
