Baklava Skillet Pancake

Ingredients
- 1 1/2 cups pancake mix
- 3/4 cup water or non-dairy milk
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp vanilla extract
- 1/4 cup ghee or melted butter
- 1 tbsp ghee or melted butter
- 1/2 cup walnuts
- 1/2 cup pistachios
- 2 tbsp sugar
- Honey and crème fraiche for serving
Instructions
- Preheat the oven to 350 degrees F.
- In a food processor, finely chop walnuts, pistachios, and sugar.
- In a mixing bowl, combine pancake mix, cinnamon, nutmeg, vanilla, water (or non-dairy milk), and 1 tbsp melted butter. Gently whisk until just combined, avoiding overmixing.
- In a 10-inch skillet, spread 1/4 cup melted butter. Add the pancake mix.
- Top with the walnut-pistachio mixture. Bake for 15-20 minutes or until cooked.
- Finish by drizzling honey and adding a dollop of crème fraiche. Enjoy your delightful baklava-inspired breakfast!
