Streusel Topping
- ¾ cup old-fashioned oats
- ¼ cup all-purpose flour
- ⅓ cup packed light brown sugar
- ⅓ cup chopped walnuts
- 5 tablespoons cold unsalted butter
- ¼ teaspoon vanilla extract
Dry Muffin Ingredients
- 1.75 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup diced apples we used honeycrisp
Wet Muffin Ingredients
- ⅓ cup packed light brown sugar
- 1 teaspoon vanilla extract
- 3 tablespoons melted unsalted butter
- ½ cup unsweetened applesauce
- 2 large eggs
- ½ cup almond milk
Instructions
- Preheat your oven to 350ºF and line a muffin tin with muffin papers.
- Prepare the streusel topping by combining oats, flour, brown sugar, walnuts, butter, and vanilla extract in a mixing bowl. Use your hands or a spoon to create a crumbly texture. Set aside.
- In another bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
- Cream together brown sugar, vanilla extract, and butter until fluffy using an electric mixer.
- Mix in applesauce until combined, then add eggs and blend.
- Incorporate dry ingredients into the wet mixture until smooth. Fold in diced apples.
- If the batter is too thick, add milk until it reaches the desired consistency.
