Ingredients
  

Streusel Topping

  • ¾ cup old-fashioned oats
  • ¼ cup all-purpose flour
  • cup packed light brown sugar
  • cup chopped walnuts
  • 5 tablespoons cold unsalted butter
  • ¼ teaspoon vanilla extract

Dry Muffin Ingredients

  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup diced apples we used honeycrisp

Wet Muffin Ingredients

  • cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons melted unsalted butter
  • ½ cup unsweetened applesauce
  • 2 large eggs
  • ½ cup almond milk

Instructions
 

  • Preheat your oven to 350ºF and line a muffin tin with muffin papers.
  • Prepare the streusel topping by combining oats, flour, brown sugar, walnuts, butter, and vanilla extract in a mixing bowl. Use your hands or a spoon to create a crumbly texture. Set aside.
  • In another bowl, whisk together flour, baking powder, salt, and cinnamon. Set aside.
  • Cream together brown sugar, vanilla extract, and butter until fluffy using an electric mixer.
  • Mix in applesauce until combined, then add eggs and blend.
  • Incorporate dry ingredients into the wet mixture until smooth. Fold in diced apples.
  • If the batter is too thick, add milk until it reaches the desired consistency.
  • Fill muffin cups ¾ full and top each with 1-1.5 tablespoons of streusel, gently pressing it into the batter.
  • Spray streusel with cooking spray and bake for 18-22 minutes until cooked inside.

Notes

  • Both white whole wheat and all-purpose flour work well in this recipe.
  • For a golden streusel topping, spray it lightly with cooking spray.
  • You might have leftover streusel, which can be used to top more muffins.
  • Not a fan of streusel? Simply skip it!
