Apple Cinnamon Oatmeal Bars

Ingredients
  

  • 1.5 cups mashed overripe banana about 3 large bananas
  • 1/2 cup almond butter or any other nut or seed butter
  • 1/4 cup ground flax
  • 1.5 cups old-fashioned oats
  • 3/4 cup oat flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 cups diced Fuji apples or any other red apple

Instructions
 

  • Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper or grease it generously.
  • In a large mixing bowl, mash the overripe bananas until smooth.
  • Add almond butter, vanilla extract, and ground flax, mixing well.
  • Incorporate oats, oat flour, baking powder, cinnamon, and sea salt into the mixture until well combined (the batter will be thick).
  • Fold in the diced apples until evenly distributed.
  • Transfer the batter to the prepared baking dish, spreading it out evenly.
  • Bake for 18 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bars cool completely before slicing and enjoying!

Notes

  • Store these oatmeal bars in an airtight container in the fridge for up to 4 days.
  • Reheat them in the microwave for 20-30 seconds or enjoy them cold or at room temperature.
