Apple Cinnamon Oatmeal Bars

Ingredients
- 1.5 cups mashed overripe banana about 3 large bananas
- 1/2 cup almond butter or any other nut or seed butter
- 1/4 cup ground flax
- 1.5 cups old-fashioned oats
- 3/4 cup oat flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 cups diced Fuji apples or any other red apple
Instructions
- Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper or grease it generously.
- In a large mixing bowl, mash the overripe bananas until smooth.
- Add almond butter, vanilla extract, and ground flax, mixing well.
- Incorporate oats, oat flour, baking powder, cinnamon, and sea salt into the mixture until well combined (the batter will be thick).
- Fold in the diced apples until evenly distributed.
- Transfer the batter to the prepared baking dish, spreading it out evenly.
- Bake for 18 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely before slicing and enjoying!
Notes
- Store these oatmeal bars in an airtight container in the fridge for up to 4 days.
- Reheat them in the microwave for 20-30 seconds or enjoy them cold or at room temperature.
