For the Apples:

  • 1½ cups chopped apples (about 2 apples)
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg

For the Blondies:

  • 1 cup melted unsalted butter (2 sticks)
  • 1¼ cups brown sugar
  • ½ cup granulated sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • ⅔ cup white chocolate chips or chopped white chocolate

For the Apple Cider Glaze:

  • 1½ cups powdered sugar
  • 2 to 4 tablespoons apple cider
  • Cinnamon to taste


Instructions

Preheat the Oven:

  1. Set the oven to 350°F.
  2. Grease a 9×13-inch baking pan with oil or butter.
  3. Line the pan with parchment paper, then grease the paper too.

Prepare the Apples:

  1. Peel and chop the apples.
  2. Toss them in a bowl with cinnamon and nutmeg. Set aside.

Make the Blondie Batter:

  1. In a large bowl, mix the melted butter, brown sugar, and granulated sugar using an electric mixer for 1 minute.
  2. Add the eggs and beat for 4 minutes until the mixture is light and fluffy.
  3. Mix in the vanilla extract.
  4. Add the flour, baking powder, salt, cinnamon, and nutmeg. Mix on low until just combined.
  5. Fold in the apples and white chocolate chips with a spatula. The batter will be thick.

Bake the Blondies:

  1. Spread the batter evenly in the prepared pan.
  2. Smooth the top with a spatula.
  3. Bake for 35 to 45 minutes, until golden on top and set around the edges. A toothpick inserted should come out clean or with just a few crumbs.
  4. Let the blondies cool for 30 minutes before slicing.

Make the Apple Cider Glaze:

  1. Sift powdered sugar into a bowl.
  2. Add apple cider and whisk until smooth. Add more cider if needed to reach the desired consistency.
  3. Drizzle the glaze over the blondies and sprinkle with cinnamon.

Storage:

  1. Keep the bars in an airtight container at room temperature for up to 2 days or in the fridge for up to 4 days.
  2. For longer storage, wrap each bar in plastic wrap and place in a container in the freezer for up to 2 months. Thaw overnight in the fridge before serving.
  3. If serving from the fridge, let the bars sit at room temperature for about 30 minutes to soften.

Notes

  • Apples: Use your favorite apples. Honeycrisp, Granny Smith, or Fuji work great.
  • Glaze: Try caramel sauce, dulce de leche, or a cream cheese glaze instead of the Apple Cider Glaze.
  • White Chocolate: Gold chocolate chips also pair nicely with apples.
