Apple Blondies

Ingredients
For the Apples:
- 1½ cups chopped apples about 2 apples
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
For the Blondies:
- 1 cup melted unsalted butter 2 sticks
- 1¼ cups brown sugar
- ½ cup granulated sugar
- 2 large eggs room temperature
- 2 teaspoons vanilla extract
- 2¼ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ⅔ cup white chocolate chips or chopped white chocolate
For the Apple Cider Glaze:
- 1½ cups powdered sugar
- 2 to 4 tablespoons apple cider
- Cinnamon to taste
Instructions
Preheat the Oven:
- Set the oven to 350°F.
- Grease a 9×13-inch baking pan with oil or butter.
- Line the pan with parchment paper, then grease the paper too.
Prepare the Apples:
- Peel and chop the apples.
- Toss them in a bowl with cinnamon and nutmeg. Set aside.
Make the Blondie Batter:
- In a large bowl, mix the melted butter, brown sugar, and granulated sugar using an electric mixer for 1 minute.
- Add the eggs and beat for 4 minutes until the mixture is light and fluffy.
- Mix in the vanilla extract.
- Add the flour, baking powder, salt, cinnamon, and nutmeg. Mix on low until just combined.
- Fold in the apples and white chocolate chips with a spatula. The batter will be thick.
Bake the Blondies:
- Spread the batter evenly in the prepared pan.
- Smooth the top with a spatula.
- Bake for 35 to 45 minutes, until golden on top and set around the edges. A toothpick inserted should come out clean or with just a few crumbs.
- Let the blondies cool for 30 minutes before slicing.
Make the Apple Cider Glaze:
- Sift powdered sugar into a bowl.
- Add apple cider and whisk until smooth. Add more cider if needed to reach the desired consistency.
- Drizzle the glaze over the blondies and sprinkle with cinnamon.
Storage:
- Keep the bars in an airtight container at room temperature for up to 2 days or in the fridge for up to 4 days.
- For longer storage, wrap each bar in plastic wrap and place in a container in the freezer for up to 2 months. Thaw overnight in the fridge before serving.
- If serving from the fridge, let the bars sit at room temperature for about 30 minutes to soften.
Notes
- Apples: Use your favorite apples. Honeycrisp, Granny Smith, or Fuji work great.
- Glaze: Try caramel sauce, dulce de leche, or a cream cheese glaze instead of the Apple Cider Glaze.
- White Chocolate: Gold chocolate chips also pair nicely with apples.
