Apple Blondies

Ingredients
  

For the Apples:

  • cups chopped apples about 2 apples
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg

For the Blondies:

  • 1 cup melted unsalted butter 2 sticks
  • cups brown sugar
  • ½ cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • cup white chocolate chips or chopped white chocolate

For the Apple Cider Glaze:

  • cups powdered sugar
  • 2 to 4 tablespoons apple cider
  • Cinnamon to taste

Instructions
 

Preheat the Oven:

  • Set the oven to 350°F.
  • Grease a 9×13-inch baking pan with oil or butter.
  • Line the pan with parchment paper, then grease the paper too.

Prepare the Apples:

  • Peel and chop the apples.
  • Toss them in a bowl with cinnamon and nutmeg. Set aside.

Make the Blondie Batter:

  • In a large bowl, mix the melted butter, brown sugar, and granulated sugar using an electric mixer for 1 minute.
  • Add the eggs and beat for 4 minutes until the mixture is light and fluffy.
  • Mix in the vanilla extract.
  • Add the flour, baking powder, salt, cinnamon, and nutmeg. Mix on low until just combined.
  • Fold in the apples and white chocolate chips with a spatula. The batter will be thick.

Bake the Blondies:

  • Spread the batter evenly in the prepared pan.
  • Smooth the top with a spatula.
  • Bake for 35 to 45 minutes, until golden on top and set around the edges. A toothpick inserted should come out clean or with just a few crumbs.
  • Let the blondies cool for 30 minutes before slicing.

Make the Apple Cider Glaze:

  • Sift powdered sugar into a bowl.
  • Add apple cider and whisk until smooth. Add more cider if needed to reach the desired consistency.
  • Drizzle the glaze over the blondies and sprinkle with cinnamon.

Storage:

  • Keep the bars in an airtight container at room temperature for up to 2 days or in the fridge for up to 4 days.
  • For longer storage, wrap each bar in plastic wrap and place in a container in the freezer for up to 2 months. Thaw overnight in the fridge before serving.
  • If serving from the fridge, let the bars sit at room temperature for about 30 minutes to soften.

Notes

  • Apples: Use your favorite apples. Honeycrisp, Granny Smith, or Fuji work great.
  • Glaze: Try caramel sauce, dulce de leche, or a cream cheese glaze instead of the Apple Cider Glaze.
  • White Chocolate: Gold chocolate chips also pair nicely with apples.
