In a large bowl, mix the melted butter, brown sugar, and granulated sugar using an electric mixer for 1 minute.
Add the eggs and beat for 4 minutes until the mixture is light and fluffy.
Mix in the vanilla extract.
Add the flour, baking powder, salt, cinnamon, and nutmeg. Mix on low until just combined.
Fold in the apples and white chocolate chips with a spatula. The batter will be thick.
