Ingredients

  • 1 pound thinly sliced chicken breast
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • ½ red onion (sliced)
  • 3 minced garlic cloves
  • Salt and black pepper to taste
  • 3 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • Optional: Corn or flour tortillas (sour cream, salsa, avocado, lettuce, lemon juice, and cilantro for serving)


Instructions

  1. Preheat the air fryer to 350°F.
  2. In a large bowl or Ziploc bag, combine chicken, veggies, garlic, salt, pepper, taco seasoning, and olive oil. Toss or shake to coat everything evenly.
  3. Arrange the mixture in a single layer in the air fryer basket.
  4. Air fry for 15-16 minutes or until veggies are tender, and the chicken reaches 165°F, shaking the basket halfway through.
  5. Let it rest for 5 minutes, then serve warm!
