Ingredients

  • 1 pound of chicken breast (cut into 1-inch pieces)
  • 1/2 red onion (cubed)
  • 1 large zucchini (chopped)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 2 tablespoons of extra virgin olive oil
  • 2 garlic cloves (minced)
  • 2 tablespoons of Cajun seasoning
  • Salt and black pepper to taste


Instructions

  1. Preheat the air fryer to 380°F.
  2. Arrange the chicken and vegetables in a single layer in the basket.
  3. Drizzle olive oil on top, add garlic and seasonings, and toss to coat the chicken and vegetables completely.
  4. Air fry for 23-25 minutes, flipping halfway through.
  5. Serve the warm dish over rice or cauliflower rice.
  6. Store leftovers in an airtight container in the fridge for up to 3 days.
