- 1 pound of chicken breast (cut into 1-inch pieces)
- 1/2 red onion (cubed)
- 1 large zucchini (chopped)
- 1 red bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 2 tablespoons of extra virgin olive oil
- 2 garlic cloves (minced)
- 2 tablespoons of Cajun seasoning
- Salt and black pepper to taste
Instructions
- Preheat the air fryer to 380°F.
- Arrange the chicken and vegetables in a single layer in the basket.
- Drizzle olive oil on top, add garlic and seasonings, and toss to coat the chicken and vegetables completely.
- Air fry for 23-25 minutes, flipping halfway through.
- Serve the warm dish over rice or cauliflower rice.
- Store leftovers in an airtight container in the fridge for up to 3 days.
