Ingredients
Crust:
- 1Ā½ cups biscuits like graham crackers
- Ā¾ cup oats
- 4 tbsp vegan butter melted
Filling:
- 1Ā½ cups vegan condensed milk
- Ā½ cup coconut cream
- Ā½ cup cornstarch
- Ā½ cup fresh or store-bought lime juice
- 1 tbsp key lime zest
- 1 tsp matcha optional, for color
Topping:
- Whipped dairy-free cream
Instructions
Prepare the Crust:
- Crush the biscuits and oats into fine crumbs using a food processor.
- Mix in the melted butter until the mixture resembles wet sand.
- Press the mixture firmly into a greased pie dish.
- Bake at 340Ā°F (170Ā°C) for 8-10 minutes until lightly golden.
Make the Filling:
- In a bowl, mix together the condensed milk, coconut cream, cornstarch, lime juice, lime zest, and matcha (if using) until smooth.
- Pour the mixture over the baked crust.
Bake the Pie:
- Bake the pie at 340Ā°F (170Ā°C) for 15 minutes or until the filling is just set.
- Remove from the oven and let it cool completely.
Chill and Serve:
- Refrigerate the pie until fully chilled.
