Lemon-Blueberry Protein Breakfast Bites

Ingredients

Scale
  • 2 cups Rolled Oats
  • 1 1/4 cups Oat Flour
  • 1 teaspoon Cinnamon
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Sea Salt
  • 1/4 cup Ground Flax Seeds
  • 1 scoop Collagen Peptides (or vanilla-flavored plant-based protein for a vegan option)
  • 2/3 cup Apple Sauce
  • 1/3 cup Maple Syrup
  • 1 Ripe Banana (mashed)
  • 1/3 cup Coconut Oil (melted)
  • Juice and zest of 1 Lemon
  • 2 cups Blueberries

For the Icing (optional):

  • 1 tablespoon Lemon Juice
  • 1/4 cup Powdered Sugar


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine all the dry ingredients.
  3. Add in the wet ingredients and mix until you get a batter.
  4. Gently fold in the blueberries.
  5. Use a cookie scoop to form 18-20 bites on the baking sheet.
  6. Flatten each bite with the back of a spoon or spatula.
  7. Bake for 10-11 minutes, then let them cool completely.
  8. While they cool, mix the lemon juice and powdered sugar for the icing.
  9. Drizzle the icing over the cooled bites.
  10. Serve and enjoy! Store any leftovers in the fridge for up to a week or freeze them for up to two months.
