Lemon-Blueberry Protein Breakfast Bites

Course Breakfast

Ingredients

  • 2 cups Rolled Oats
  • 1 1/4 cups Oat Flour
  • 1 teaspoon Cinnamon
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Sea Salt
  • 1/4 cup Ground Flax Seeds
  • 1 scoop Collagen Peptides or vanilla-flavored plant-based protein for a vegan option
  • 2/3 cup Apple Sauce
  • 1/3 cup Maple Syrup
  • 1 Ripe Banana mashed
  • 1/3 cup Coconut Oil melted
  • Juice and zest of 1 Lemon
  • 2 cups Blueberries

For the Icing (optional):

  • 1 tablespoon Lemon Juice
  • 1/4 cup Powdered Sugar

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine all the dry ingredients.
  • Add in the wet ingredients and mix until you get a batter.
  • Gently fold in the blueberries.
  • Use a cookie scoop to form 18-20 bites on the baking sheet.
  • Flatten each bite with the back of a spoon or spatula.
  • Bake for 10-11 minutes, then let them cool completely.
  • While they cool, mix the lemon juice and powdered sugar for the icing.
  • Drizzle the icing over the cooled bites.
  • Serve and enjoy! Store any leftovers in the fridge for up to a week or freeze them for up to two months.
