Ingredients

Scale
  • Shredded coconut (for rimming)
  • Lime wedge (for rimming)
  • 1/4 cup coconut milk
  • 1/4 cup pineapple juice
  • 1/2 cup frozen pineapple
  • 4 ounces prosecco


Instructions

  1. Spread coconut on a plate. Take a lime wedge and use it to moisten the rims of two champagne flutes, then dip them into the coconut.
  2. In a blender, combine coconut milk, pineapple juice, frozen pineapple, and prosecco. Blend until smooth.
  3. Pour the blended mixture into the rimmed glasses and enjoy your tropical-inspired winter treat!
