Mini brie toasts are a breeze to make and caramelizing their tops adds a fun twist. The sugary crunch gives way to gooey brie and sweet jam. Prepare the toasts and save the brûlée step for serving time; this way, the brie gets warm and melty, and you get to impress your guests.

Brûléed Brie Crostini

  • 1 baguette (sliced into 1/2″-thick pieces)
  • 2 tablespoons unsalted butter (softened)
  • 3/4 cup cherry jam
  • 1 8-ounce wheel of brie, sliced into 1/3″-thick pieces
  • 1/4 cup granulated sugar
  1. Preheat your oven to 400°F. Spread a thin layer of butter on each slice of bread and arrange them on a baking sheet.
  2. Bake the bread until it’s toasted and golden, usually about 10 to 12 minutes. Let them cool for about 5 minutes.
  3. Spread each toast with jam. Place a slice of brie on top, adjusting the size if needed. Sprinkle each slice of brie with about 1 scant teaspoon of granulated sugar.
  4. Use a kitchen torch to caramelize the sugar on top of each toast. Serve immediately and enjoy the deliciousness!
