Oven-Baked Kefta

Ingredients
- 1 pound of ground beef 85/15 or 80/20
- 2 teaspoons of minced garlic
- 2 tablespoons of finely chopped parsley
- 2 tablespoons of finely chopped cilantro
- 2 tablespoons of plain whole milk yogurt
- 2 teaspoons of sumac
- 2 teaspoons of allspice
- 2 teaspoons of paprika
- 1 teaspoon of coriander
- 1 teaspoon of cumin
- 1 teaspoon of salt
- 1/4 teaspoon of optional cardamom
- 1/2 teaspoon of black pepper
- Butter ghee, or oil for brushing
Instructions
- Preheat your oven to 450°F.
- Place wooden skewers in a bowl of water to soak for 20 minutes to prevent burning in the oven.
- In a large bowl, combine the ground beef, minced garlic, parsley, cilantro, yogurt, and all the spices. Mix everything together thoroughly.
- Shape the spiced ground beef onto the skewers. If it’s difficult to keep the meat on the skewer, refrigerate it for 30 minutes to firm it up before shaping.
- Brush a wire rack or tray with ghee, butter, or oil. Place the kefta skewers on the rack and brush the tops with more ghee, butter, or oil.
- Bake in the oven for about 10 to 12 minutes or until the internal temperature reaches 160°F. Be careful not to over-bake, as it may dry out.
- Once out of the oven, loosely tent the meat with foil for 5 to 10 minutes to allow the juices to redistribute and keep it extra juicy.
- Serve and enjoy your delicious kefta straight from the oven!
Notes
- You can use ground lamb instead of ground beef, or even a combination of both.
