Moroccan Kefta Kabobs

  • 1 pound lean ground beef or ground lamb
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped cilantro
  • 1/4 cup grated yellow onion
  • 1 teaspoon dried mint
  • 1 teaspoon cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 to 2 tablespoons harissa
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon ginger powder
  • Ghee for basting
  • Vegetable oil for greasing the grill
  • Skewers
  1. In a bowl, mix together the ground meat, parsley, cilantro, onion, dried mint, cumin, paprika, salt, black pepper, harissa, turmeric, and ginger powder until well combined.
  2. Shape the meat mixture onto skewers. If using wooden skewers, soak them in water for about 25 minutes to prevent burning.
  3. Preheat the grill over medium-high heat and grease it well with vegetable oil.
  4. Once the grill is hot, add the skewers. Grill for 3 to 4 minutes on each side, or until nicely browned with grill marks.
  5. Optionally, brush the kabobs with ghee while cooking for added flavor.
