Ingredients

  • 1 pound lean ground beef or ground lamb
  • 1/4 cup finely chopped parsley
  • 1/4 cup finely chopped cilantro
  • 1/4 cup grated yellow onion
  • 1 teaspoon dried mint
  • 1 teaspoon cumin
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 to 2 tablespoons harissa
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon ginger powder
  • Ghee for basting
  • Vegetable oil for greasing the grill
  • Skewers

Instructions

  • In a bowl, mix together the ground meat, parsley, cilantro, onion, dried mint, cumin, paprika, salt, black pepper, harissa, turmeric, and ginger powder until well combined.
  • Shape the meat mixture onto skewers. If using wooden skewers, soak them in water for about 25 minutes to prevent burning.
  • Preheat the grill over medium-high heat and grease it well with vegetable oil.
  • Once the grill is hot, add the skewers. Grill for 3 to 4 minutes on each side, or until nicely browned with grill marks.
  • Optionally, brush the kabobs with ghee while cooking for added flavor.
  • Remove from the grill and serve warm with rice, salad, or in a wrap. Enjoy your delicious kefta kabobs!
