Ingredients

**Garlic and Herb Spread:**

  • 1/4 cup mayonnaise
  • 1 tablespoon finely chopped parsley
  • 2 teaspoons finely minced garlic
  • 1 tablespoon grated parmesan
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano

**Bread and Filling:**

  • 8 slices thick bread
  • 3 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Turkey pepperoni
  • 1/4 cup chopped basil
  • 1/2 cup marinara sauce

Instructions

**Prepare the Garlic and Herb Spread:**

  • Mix together mayo, parsley, garlic, parmesan, black pepper, and oregano in a small bowl. Set aside.

**Assemble the Grilled Cheese:**

  • Spread about half a tablespoon of the garlic and herb spread on one side of each slice of bread. Flip over and assemble the fillings on one side, layering mozzarella, marinara, pepperoni, basil, and parmesan. Top with more mozzarella and seal with another slice of bread, spread side up.

**Cook:**

  • Heat a pan over medium-low heat and place the assembled sandwich. Cook for about 3 minutes on each side until golden brown and the cheese melts.

**Serve:**

  • Enjoy warm with extra marinara sauce for dipping!

Notes

  • You can skip adding marinara inside and use it as a dip instead.
  • Sliced mozzarella cheese can be used instead of shredded.
  • If preferred, replace mayo with softened salted butter.
