No-Bake Biscoff Truffles

Ingredients

  • 1 package about 32 cookies Biscoff cookies
  • 5 ounces cream cheese softened
  • 1/4 cup cookie butter
  • 2 cups white chocolate
  • 1/4 cup Biscoff cookie crumbs for topping

Instructions

  • – Crush the Biscoff cookies finely in a food processor. If you don’t have one, just put the cookies in a ziplock bag and use a rolling pin to crush them.
  • – In a mixing bowl, combine the softened cream cheese, cookie butter, and crushed Biscoff cookies until you have a dough-like consistency.
  • – Roll about 2 tablespoons of the dough into balls and repeat with the remaining dough.
  • – Chill the truffle balls in the fridge or freezer for 15 to 30 minutes until they firm up.
  • – Melt the white chocolate in the microwave in 30-second intervals on 50% power, stirring in between until smooth.
  • – Dip each truffle into the melted chocolate until fully covered, letting any excess drip off using a fork. Sprinkle Biscoff cookie crumbs on top if desired.
  • – Chill the truffles in the fridge or freezer for a few minutes until the chocolate hardens.

For a less sweet option, you can use milk or semi-sweet chocolate instead of white chocolate.
