Check out these adorable mini strawberry pancake bites! Imagine pancakes, but smaller and cuter! They’re tiny, filled with yummy fruit, and perfect for a quick bite of goodness. You can use any fruit you love, but we’re using strawberries because they’re in season!
Mini Strawberry-Stuffed Pancake Bites
Servings 4
Ingredients
**For the Pancake Batter:**
- 1 cup of all-purpose flour
- 2 tablespoons of white sugar
- 1 1/2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 large egg
- 2 tablespoons of melted unsalted butter
- 1 teaspoon of vanilla extract
- 1 cup of cold buttermilk
**Other:**
- Strawberries sliced thinly
- Unsalted butter
- Powdered sugar
- Maple syrup
Instructions
- In a big bowl, mix together the flour, sugar, baking powder, baking soda, salt, egg, melted butter, vanilla extract, and buttermilk until it’s thick but still a bit clumpy. Don’t mix too much!
- Heat up a griddle or a big pan on medium-low to medium heat.
- Butter the griddle or pan so your pancakes don’t stick.
- Take a skewer or fork and dip each strawberry slice into the pancake batter, then put it on the griddle or pan. Keep doing this until your pan is full.
- Cook each mini pancake until it’s golden on one side, then flip it and cook the other side.
- Once you’ve made all your pancakes, serve them up with some maple syrup and powdered sugar.
