Whipped Feta Baked Chicken

Ingredients
- 1 1/2 lbs chicken breasts
- 1 tsp salt adjust to taste
- ½ tsp black pepper adjust to taste
- 1 tbsp oregano
- 1 tbsp thyme
- 8 oz crumbled feta
- 1/2 cup full-fat yogurt or sour cream
- Juice of 1 lemon
- 2 cloves garlic
- 1/4 cup olive oil divided
- 8 oz baby cherry tomatoes
- 1/2 cup chopped and pitted manzanilla green olives
- 1/2 cup chopped and pitted kalamata olives
- 1 small chopped shallot
Instructions
- Lay the chicken in a 12 x 8 oven-proof dish, making sure it’s in a single layer.
- Sprinkle half of the salt, pepper, oregano, and thyme over the chicken. Flip it and season the other side.
- In a blender, blend together the feta cheese, yogurt, lemon juice, garlic, and 2 tbsp of olive oil until smooth.
- Pour the whipped feta mixture over the chicken.
- Top it off with tomatoes, green olives, kalamata olives, shallots, the remaining olive oil, salt, and pepper.
- Bake uncovered at 375 degrees Fahrenheit for 35-40 minutes, or until the chicken is thoroughly cooked. Note: If the chicken is thick, it may need more time, so consider pounding it thinner for quicker cooking.
- Garnish with fresh Italian parsley and/or cilantro.
