Say farewell to bland, dry baked chicken, and welcome the juicy goodness of this feta-infused chicken! Pair it with a side of rice, potatoes, or cauliflower rice for a low-carb delight!

Whipped Feta Baked Chicken

  • 1 1/2 lbs chicken breasts
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper adjust to taste
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 8 oz crumbled feta
  • 1/2 cup full-fat yogurt or sour cream
  • Juice of 1 lemon
  • 2 cloves garlic
  • 1/4 cup olive oil divided
  • 8 oz baby cherry tomatoes
  • 1/2 cup chopped and pitted manzanilla green olives
  • 1/2 cup chopped and pitted kalamata olives
  • 1 small chopped shallot


  • Lay the chicken in a 12 x 8 oven-proof dish, making sure it’s in a single layer.
  • Sprinkle half of the salt, pepper, oregano, and thyme over the chicken. Flip it and season the other side.
  • In a blender, blend together the feta cheese, yogurt, lemon juice, garlic, and 2 tbsp of olive oil until smooth.
  • Pour the whipped feta mixture over the chicken.
  • Top it off with tomatoes, green olives, kalamata olives, shallots, the remaining olive oil, salt, and pepper.
  • Bake uncovered at 375 degrees Fahrenheit for 35-40 minutes, or until the chicken is thoroughly cooked. Note: If the chicken is thick, it may need more time, so consider pounding it thinner for quicker cooking.
  • Garnish with fresh Italian parsley and/or cilantro.
