Lay the chicken in a 12 x 8 oven-proof dish, making sure it's in a single layer.
Sprinkle half of the salt, pepper, oregano, and thyme over the chicken. Flip it and season the other side.
In a blender, blend together the feta cheese, yogurt, lemon juice, garlic, and 2 tbsp of olive oil until smooth.
Pour the whipped feta mixture over the chicken.
Top it off with tomatoes, green olives, kalamata olives, shallots, the remaining olive oil, salt, and pepper.
Bake uncovered at 375 degrees Fahrenheit for 35-40 minutes, or until the chicken is thoroughly cooked. Note: If the chicken is thick, it may need more time, so consider pounding it thinner for quicker cooking.
Garnish with fresh Italian parsley and/or cilantro.
