Mediterranean Chickpea Salad

Ingredients

  • **For the Dressing:**
  • ¼ cup of olive oil
  • Juice of 1 lemon
  • 1 teaspoon of vinegar
  • Salt (to your liking)
  • ½ teaspoon of pepper
  • 1 teaspoon of oregano
  • 1 teaspoon of cumin
  • 1 tablespoon of honey

**For the Salad:**

  • 2 cans (15 ounces each of chickpeas)
  • 1 can (15 ounces of black beans)
  • 2 cups of chopped cucumbers
  • 1 large red onion (chopped)
  • ½ cup of fresh parsley
  • ½ cup of fresh cilantro
  • 2 cups of chopped tomatoes
  • 1 cup of chopped green olives
  • 1 cup of chopped kalamata olives


Instructions

  1. In a small bowl, whisk together all the dressing ingredients until well combined.
  2. Chop up all those veggies – get them ready for the flavor party!
  3. In a large bowl, toss together all the ingredients – the beans, cucumbers, onion, parsley, cilantro, tomatoes, green olives, and kalamata olives.
  4. Pour that fantastic dressing over the top and give it a good mix.
