Ingredients

  • 3 ripe bananas (mashed)
  • 2 1/4 cups old-fashioned oats
  • 1 apple (peeled, cored, and finely diced)
  • 1/4 cup maple syrup (adjust to your liking)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. Grease an 11×7 non-stick baking dish with cooking spray. Add the mashed bananas to the dish and mash them further with a fork.
  3. Combine all the ingredients in the prepared baking dish – oats, diced apples, maple syrup, baking powder, cinnamon, nutmeg, salt, milk, egg, melted butter, and vanilla extract. Stir everything together until well combined.
  4. Bake for 25-30 minutes or until the oatmeal is set and golden brown on top.
  5. Slice and serve with your choice of nuts and a drizzle of maple syrup if you like. Enjoy your delicious and nutritious breakfast!
