Ingredients

For the Crust:

  • 10.5 oz about 2 cups biscuits, crushed
  • 6 tbsp dairy-free butter or margarine melted

For the Filling:

  • 14 oz dairy-free cream cheese
  • cup powdered sugar
  • cup vegan vanilla protein powder
  • Zest and juice of one lemon
  • 2 tbsp cornstarch
  • 6 oz dairy-free white chocolate

Instructions

  • Prepare the Crust:
  • Crush the biscuits into fine crumbs and place them in a large bowl.
  • Add the melted butter and mix until well combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan.
  • Chill in the fridge while you prepare the filling.
  • Make the Filling:
  • Melt the white chocolate and allow it to cool slightly.
  • In a separate bowl, combine the cream cheese, powdered sugar, protein powder, lemon zest, lemon juice, and cornstarch.
  • Gently fold in the melted white chocolate until everything is well mixed.
  • Assemble the Cheesecake:
  • Pour the filling over the chilled crust and spread it evenly.
  • Refrigerate overnight to set.
  • Decorate:
  • Once set, remove the cheesecake from the pan.
  • Garnish with extra lemon zest and white chocolate curls for a beautiful finish.
