Vegan Snickers Brownies

Ingredients
For the Brownies:
- 4 oz dark chocolate
- ¼ cup dairy-free butter
- 1 cup light brown sugar
- ½ cup plant-based yogurt
- 1 cup self-rising flour
- ¼ tsp baking soda
- 1 cup warm dairy-free milk
- ½ cup cocoa powder
- ½ cup dark chocolate chunks or chips
For the Caramel:
- ¾ cup peanut butter
- ¼ cup maple syrup
- 2 tbsp melted coconut oil
- ½ cup chopped peanuts
For the Chocolate Topping:
- 7 oz dark chocolate
- 2 tbsp coconut oil
Instructions
Preheat the Oven:
- Preheat your oven to 350°F (180°C) and line a square baking tin with parchment paper.
Prepare the Brownie Batter:
- Melt the dark chocolate and dairy-free butter together.
- Stir in the light brown sugar until it dissolves.
- Add in the warm dairy-free milk and plant-based yogurt, mixing until smooth.
- Sift in the cocoa powder and self-rising flour, and mix until the batter is smooth and glossy. The mixture should be thick but pourable.
- Fold in the dark chocolate chunks or chips.
Bake the Brownies:
- Pour the batter into the prepared tin.
- Bake for 30 minutes or until the brownies are almost cooked through.
- Let the brownies cool completely.
Make the Caramel Layer:
- In a bowl, combine the peanut butter, maple syrup, melted coconut oil, and chopped peanuts.
- Pour this caramel mixture over the cooled brownies.
Add the Chocolate Topping:
- Melt the dark chocolate with the coconut oil until smooth.
- Pour the melted chocolate over the caramel layer.
Set the Brownies:
- Place the brownies in the fridge to set.
