Vegan Snickers Bars

Ingredients
- 1 can of pumpkin puree 15 oz
- 1/2 cup creamy almond butter
- 1/3 cup + 1/4 cup cacao powder
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/2 cup vegan chocolate chips plus more for topping
Instructions
- Preheat oven to 350°F and line a standard-size loaf pan with parchment paper or grease with non-stick spray.
- In a large mixing bowl, combine all the ingredients and mix well using a rubber spatula or whisk.
- Fold in chocolate chips, then transfer the batter to the loaf pan.
- Top with additional chocolate chips if desired, then bake for 45-50 minutes or until a toothpick inserted into the center comes out mostly clean.
- Allow the brownies to cool for 30 minutes before slicing and enjoying!
Notes
- Test for doneness with a toothpick.
- Clean the knife between each slice for neat cuts.
