Ingredients

  • 1 cup Medjool dates (soaked in hot water)
  • 3 tablespoons peanut butter
  • 1 teaspoon vanilla extract

Nougat Layer

  • 1.5 cups almond flour
  • 1.5 tablespoons date caramel
  • 4 tablespoons peanut butter

Peanuts

  • 1/2 cup roasted peanuts

Dark Chocolate Coating

  • 1.5 cups dark chocolate chips
  • 2-3 teaspoons coconut oil


Instructions

  1. Soak dates in hot water for 10 minutes. Line a loaf pan with parchment paper.
  2. Blend soaked dates, peanut butter, and vanilla extract until smooth to make date caramel.
  3. In a separate bowl, combine almond flour, date caramel, and peanut butter to form a crumbly dough.
  4. Press the dough into the loaf pan to create the crust.
  5. Spread date caramel over the crust and top with roasted peanuts.
  6. Freeze for 60-90 minutes until firm.
  7. Melt chocolate with coconut oil, then coat each bar.
  8. Freeze for 10-15 minutes until chocolate hardens.
