Vegan Pumpkin Brownies

Ingredients

  • 1 can of pumpkin puree (15 oz)
  • 1/2 cup creamy almond butter
  • 1/3 cup + 1/4 cup cacao powder
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/2 cup vegan chocolate chips (plus more for topping)


Instructions

  1. Preheat oven to 350°F and line a standard-size loaf pan with parchment paper or grease with non-stick spray.
  2. In a large mixing bowl, combine all ingredients and mix well using a rubber spatula or whisk.
  3. Fold in chocolate chips, then transfer the batter to the loaf pan.
  4. Top with additional chocolate chips if desired, then bake for 45-50 minutes or until a toothpick inserted into the center comes out mostly clean.
  5. Allow the brownies to cool for 30 minutes before slicing and enjoying!

Notes

  • Test for doneness with a toothpick.
  • Clean the knife between each slice for neat cuts.
