Vegan Linzer Cookies

Ingredients
- – 1/2 cup + 2 tbsp vegan butter softened at room temperature
- – 1/2 cup cane sugar
- – 1/4 cup maple syrup
- – 1 1/2 tsp vanilla extract
- – 1 1/2 tsp almond extract
- – 1 cup finely ground hazelnuts skins removed
- – 2 cups gluten-free all-purpose flour
- – 1 tsp baking powder
- – 1/2 tsp baking soda
- – 1/2 tsp xanthan gum
- – 1/4 tsp salt
- – 1 16 oz jar of seedless raspberry jam
Instructions
- Preheat your oven to 350˚F and line baking sheets with parchment paper.
- In a large stand mixer or a regular mixing bowl with an electric hand mixer, blend together butter, sugar, maple syrup, vanilla, and almond extract until smooth.
- Grind hazelnuts into a crumb-like texture using a spice grinder or food processor.
- In another bowl, mix together all dry ingredients, including ground hazelnuts. Slowly add the dry mixture to the wet mixture, mixing until the dough starts to come together.
- Roll out the dough to about 1/8″ thick. Use circular cookie cutters to cut cookies. Reserve half of the cookies and cut an extra shape in the center, whether it’s another circle, star, heart, or Christmas tree. These will be the top part of the sandwich.
- Bake the cookies for 9-11 minutes until lightly golden brown. Remove from the oven and let them cool completely.
- Once cooled, take a whole cookie, spread jam on it, leaving some room around the edge, and place a cut-out cookie on top. Optional: sprinkle the top cookie with powdered sugar. Enjoy!
Notes
- Almonds also work well in this recipe.
- Xanthan gum, though not necessary, enhances the texture of gluten-free baked goods. You can find it at specialty grocery stores or online.
