Ingredients

Crust:

  • 1Ā½ cups biscuits like graham crackers
  • Ā¾ cup oats
  • 4 tbsp vegan butter melted

Filling:

  • 1Ā½ cups vegan condensed milk
  • Ā½ cup coconut cream
  • Ā½ cup cornstarch
  • Ā½ cup fresh or store-bought lime juice
  • 1 tbsp key lime zest
  • 1 tsp matcha optional, for color

Topping:

  • Whipped dairy-free cream

Instructions

Prepare the Crust:

  • Crush the biscuits and oats into fine crumbs using a food processor.
  • Mix in the melted butter until the mixture resembles wet sand.
  • Press the mixture firmly into a greased pie dish.
  • Bake at 340Ā°F (170Ā°C) for 8-10 minutes until lightly golden.

Make the Filling:

  • In a bowl, mix together the condensed milk, coconut cream, cornstarch, lime juice, lime zest, and matcha (if using) until smooth.
  • Pour the mixture over the baked crust.

Bake the Pie:

  • Bake the pie at 340Ā°F (170Ā°C) for 15 minutes or until the filling is just set.
  • Remove from the oven and let it cool completely.

Chill and Serve:

  • Refrigerate the pie until fully chilled.
  • Serve with a dollop of whipped dairy-free cream and enjoy!
